2 Simple & Delicious One-Pot Meals

April 04, 2017

We all know that after a long day’s work or school, it can be very difficult to muster up the energy to cook a delicious, home-cooked meal.

All too often takeaways and microwave meals take preference over a hearty, healthy, home-made dish.

However, that needn’t be the case anymore with these two scrumptiously simple and decadently delicious one-pot meals that are not only tasty, but so simple to make – and all in one pot!

Red Pepper and Sausage Pasta Pot

Ingredients:

500 g sausage of your choice
500 g pasta of your choice
2 red peppers, chopped
1 onion, chopped
3 garlic cloves, chopped
1 cup chicken broth
½ cup milk
1 tablespoon cooking oil
Salt
Pepper
Parmesan/cheese of your choice

Method:

In a large-sized pot, add the cooking oil along with the chopped garlic and onions.

Sautée the onion with the oil and the garlic until the onion is translucent. Then, add the sausage to the pot and cook until medium rare.

Once the sausage is at a medium rare temperature, add the chopped red peppers and mix well. Add salt and pepper to taste.

Then, slowly add the chicken broth and milk and bring to the boil. Allow to simmer for 5-7 minutes.

Once the mixture is gently simmering, add the pasta and cook until al dente for about 5 minutes.

Strain the pasta in a sieve and serve in bowls. Sprinkle with grated parmesan or cheese of your choice.

Lime & Coriander Chicken and Rice Pot

Ingredients:

4 skinless chicken breasts
2 tablespoons butter
1 cup uncooked white rice
2 garlic cloves, chopped
2 cups chicken broth
½ cup coriander, chopped
Juice of 3 limes
Salt
Pepper

Method:

In a fairly large pot, melt the butter and add the garlic. Once the butter is melted, cook the chicken* breasts until lightly browned and remove from pan and set aside.

*You can either cook the breasts as whole, or cut them into smaller pieces. Cooking times will then vary.

Once the chicken is browned on the outside, add the rice to the pot as well as the chicken broth, lime juice and coriander. Add salt and pepper to taste.

Turn the heat down and let the pot simmer on low heat for about 25 minutes until the rice is fully cooked and the broth is absorbed.

Serve in bowls with a squeeze of fresh lime juice and top with a few leaves of coriander.
