Ratatouille Over Creamy Polenta

Ingredients:

2 large eggplants
1 red bell pepper
3 large Roma tomatoes
3 large zucchinis
1 onion
3 garlic cloves
1 sprig of rosemary
Olive oil
Salt
Pepper

Creamy Polenta:

4 cups polenta (you can find it in the maize meal isle)
½ cup grated Parmesan or Pecorino cheese
2 cups boiling water
1 tablespoon butter
Salt
Pepper

Method:

Pre-heat the oven to 190-degrees celsius.

Cut all the vegetables into slices or cubes of your choice and lay them on a large sheet pan.

Once they are all spread across the sheet pan, drizzle generously with olive oil and season with salt and pepper.

Cut the garlic cloves into quarters and scatter them all over the vegetables. Add the sprig of rosemary to the pan of vegetables.

Roast in the oven for 25 minutes. Remove, toss and place back in the oven for another 25 minutes. Remove, toss and allow to cook through for a final 25 minutes.

For the creamy polenta:

In a large bowl, pour the four cups polenta and cover with two cups boiling water.

Cover the bowl with a smaller plate and allow to stand for 5 minutes. Once the polenta has expanded, mix in the butter and grated cheese.

Season with salt and pepper.

Serve the roasted ratatouille vegetables on top of the creamy polenta.
