Tasty Traditional Meat Pie Fillings

November 02, 2016

Meat pie is a very popular pastry snack here in Nigeria. From  Lagos and Calabar to Kano and Maiduguri, we love meat pie. It flies off the shelves of every confectionary shop, especially Mr Bigg’s – one of our fast food chain pioneers.

Meat pie is made out of dough and filled with mince meat and vegetables (usually carrots and Irish potatoes). This snack can also be served as a starter for your meals. Most people store these pies in the freezer as a convenient snack.

It is often confused with the Spanish Empanadas, because the two snacks have similar shapes but the process of preparation and the fillings used for them differs greatly.

The overall taste of the meat pie is based almost entirely on the taste of its filling. One of the unique qualities of Mr Bigg’s meat pie is it’s scrumptious, mouth-wateringly juicy meat filling. So, getting the taste of the fillings right is very important.

Here is how to prepare delicious meat pie fillings:

Ingredients

300g mince meat

6 baby Irish potatoes

2 chopped carrots

1 red onions

Thyme

Curry powder

Maggi/Knorr stock cubes

Cayenne pepper

3 Tbsp plain flour

1 green chilli

1 red chilli

1 bay leaf

Olive oil

Salt

Method

Chop the carrots into cubes, the onions and chillies into rings, and then set them aside. Boil the baby potatoes with salt until tender, then dice them into cubes.

Heat 1 tablespoon of olive oil in a deep frying pan.

Put your mince meat in a bowl and season with stock cubes, salt, thyme, cayenne pepper, then mix.

Add the mixed mince meat to the pan and fry it until the colour changes from pink to brown.

Add the rest of the ingredients that you have prepared to the pan and stir until the veggies soften. You can add a bit of water so the mince remains juicy and doesn’t burn.

Add the bay leaf and leave it for about 5 minutes, then take it out. Remember you only want a hint of flavour from it.

Mix 3 tablespoons of flour with a little bit of water, and stir, to create a thick, creamy texture.

Re-season with half cube stock and leave the mixture to simmer for 5 minutes. Then take the sauce off heat.

Enjoy!
