In our busy lives, we sometimes shun breakfast; quickly grabbing a cereal bar, or a piece of fruit or completely leaving it out and surviving on coffee alone.

To help you up your breakfast game and ensure you have the energy you need to kickstart your day, we’ve selected two simple, yet unusual, breakfast recipes that are delicious, nutritious and simple to make!
Spinach, Feta & Mushroom Frittata
Ingredients:
3 cups baby spinach
1 cup white button mushrooms, sliced
8 large eggs
½ a cup of feta cheese, crumbled
1 tablespoon butter
½ cup milk
Olive oil
Salt
Pepper
Method:
In a skillet pan, melt the butter with a little bit of olive oil over a medium to high heat. Add the mushrooms and cook for at least 4 minutes until the mushrooms become tender.
In a separate mixing bowl, whisk the eggs and milk together, and season with salt and pepper.
Add the baby spinach to the skillet with the mushrooms and cook until just wilted. Pour in the eggs and cook until the eggs begin to set.
Sprinkle the feta cheese on top and allow to melt a little.
Serve with black pepper and salt.
Cinnamon Almond Quinoa Breakfast Bowl
Ingredients:
½ cup uncooked quinoa
1 cup almond milk
2 cinnamon sticks or 2 tablespoons ground cinnamon
½ cup berries (of your choice)
½ cup toasted sliced almonds
Pinch of salt
Method:
In a small saucepan, add the quinoa along with the almond milk and cinnamon and bring to a slight simmer. Once the mixture starts to simmer, add the pinch of salt.
Turn the heat up on high for 5 minutes before lowering the heat to a medium temperature again, then allow to cook for at least 15 minutes, stirring occasionally.
After 15 minutes, remove the quinoa from the saucepan and pour into bowls. Allow to sit for another 5 minutes so that the quinoa can absorb the rest of the cinnamon-flavoured almond milk.
Once absorbed, top with fresh berries of your choice and toasted, sliced almonds.
You can serve this dish hot or cold and add honey or coconut cream for a extra touch of sweetness.
